Bacon-Wrapped Ranch Meatloaf

Ingredients:

1.5 lbs ground beef

½ c. bread crumbs or crushed crackers or crushed pork rinds

1 egg

½ c. ketchup

1 Tbs. mustard

1 Tbs. Worcestershire Sauce

8-10 strips of Bacon

7 oz can green chilies (optional)

Onion (optional)

4-6 cheese sticks of your choice (colby jack and pepper jack are our favorite)

Spices: 1 tsp black pepper, ½ Tbs garlic powder, 1 Tbs dry Ranch mix.

 

Directions:

Preheat oven to 350 degrees.

Mix ground beef, bread crumbs or crackers, egg, ketchup, mustard, w-sauce, spices, and green chilies &/or onions until combined.

Basket weave the bacon into a shape slightly longer and twice as wide as your desired meatloaf shape.

Place approximately half of the meat mixture onto the bacon shaping it into a rectangle.

Now, add a layer of cheese sticks in the middle of the formed meat mixture.  Leave about 1.5 inches all the way around the edges open.

Place the remaining meat mixture on top of the cheese and gently form it to the same shape as the bottom layer. Make sure to seal the edges all the way around the cheese, this will help everything hold together after cooking.

Now, pull the bacon around it to meet across the top from all sides.

Bake at 400 degrees for 45-60 minutes or until internal temperature reaches 160 degrees. This is really good smoked as well. We usually turn the temp down to 350 and cook a little longer on the smoker.
